- 3 Tbsp. all purpose flour
- 1/2 tsp. dried thyme
- 1/2 tsp. salt (plus more to taste)
- 1/2 tsp. ground black pepper
- 1 pinch cayenne pepper
- 1 1/4 lb. turkey cutlets
- 3 Tbsp. butter (divided)
- 1/4 cup shallots (finely chopped)
- 1 cup Santa Cruz Organic Apple Juice
- 2 Tbsp. Dijon mustard
- 1 tsp. Italian flat leaf parsley (finely chopped, for garnish, optional)

Directions
- COMBINE flour, thyme, salt, pepper and cayenne in shallow bowl. Dredge cutlets in flour mixture. Shake off excess flour.
- MELT 2 tablespoons butter in large skillet over medium-high heat. Saute cutlets until golden brown on both sides, about 3 to 4 minutesm per side. Tranfer to plate. Tent with foil.
- Melt remaining tablespoon butter in skillet over medium heat. Saute shallot until softened, about 1 minute. Add apple juice and mustard to skillet. Increase heat to medium-high. Bring sauce to boil. Simmer, cooking until sauce begins to thicken, about 4 minutes. Return turkey to skillet with accumulated juices. Season to taste with salt and pepper. Garnish with fresh parsley.

I found this recipe looking for a fat free recipe for turkey cutlets. it isn't exactly fat free, but I decreased the amount of fat by using Pam instead of butter in the skillet. I didn't have some of the ingredients, so I altered the recipe with what I did have. I used white onion instead of shallot. I also used White Cranberry Pear juice instead of Apple Juice and Honey Mustard instead of Dijon Mustard. It was very delicious.

Easy and delicious. This Thanksgiving it was just my daughter and I so buying a turkey seemed excessive. This recipe was perfect. We were able to enjoy a turkey dinner and it was perfect. Easy to make and the turkey was tender and delicious. I highly recommend this recipe. You won’t be disappointed
