- 1 apple (medium, cut off the core and thinly sliced)
- 1 watermelon radish (medium, peeled if skin is tough, halved and thinly sliced)
- 1 fennel bulb (small, thinly sliced)
- 2 oz. grana (shaved, or other crumbly aged cheese such as parmesan, manchego, gruyere, or asiago)
- 1/2 cup walnuts (toasted and coarsely chopped or broken up)
- 1/2 pomegranate (a large, optional)
- salt (flaky, such as Maldon)
- ground black pepper
