  • 2 tablespoons brown sugar
  • 1 tablespoon water
  • 2 apples (medium, about 10 oz, peeled, cored, quartered and cut into 3mm slices)
  • 2 1/2 cups milk
  • 1 vanilla bean (halved lengthwise)
  • 4 slices fruit cake
  • 3 large eggs
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg

    Directions

    1. Put the brown sugar, water and apples in a medium pan and cook, stirring, over medium heat for about 5 mins or until the fruit is tender.
    2. Preheat the oven to 325°F. Grease a deep 6-cup ovenproof dish.
    3. Pour the milk into a medium saucepan and add the vanilla bean. Heat until just below boiling point, then remove from the heat and leave to stand for 5 mins. Discard the vanilla bean.
