- 1 cup cabbage (or 1 green tomato finely chopped)
- 1 red bell pepper (chopped with core and seeds removed)
- 1 medium onion (finely chopped)
- 1 cucumber (small, finely chopped)
- 1 pepper (cayenene, minced *Optional for spiciness)
- 1 liter white vinegar (divided)
- 1/4 cup granulated sugar
- 1 tsp. ground mustard
- 1/2 tsp. turmeric
- 1 tsp. celery seed
- 1/3 cup water
