- 12 baby potatoes (tri-colored, boiled, then placed in a ice bath, and cut into halves)

- 1/4 cup apple cider vinegar
- 2 cloves garlic (minced)
- 3 Tbsp. Dijon mustard
- 3 Tbsp. maple syrup
- 2 tsp. fresh lemon juice
- 1 Tbsp. Italian seasoning
