- 2 oz. guajillo chile (dried New Mexico and, pods)
- 1 garlic (smallish head of)
- vegetable oil
- 9 oz. guinness (or other stout)
- 1 tsp. marjoram (dried, if stuck, use oregano)
- 2 slices bacon (to yield about one tablespoon bacon fat)
- 3 lb. sirloin (trimmed tri-tip, neatly diced into one-half of three-quarter-inch dices. Partially freeze the meat for easier slicing. You can use chuck or short ribs, but avoid round because it turns into rubbery little cubes)
- 1/2 lb. sausages (bulk, without fennel, sweet or hot, your choice)
- freshly ground black pepper
- 2 cups sweet onion (diced)
- 1 1/2 cups homemade chicken broth
- roasted garlic
- 10 Tbsp. salt free chili powder (premium, such as Gebhardt's or Whole Foods)
- 2 Tbsp. ground cumin (toasted briefly)
- 2 tsp. sea salt
- 2 cups tomato sauce
- 0.5 oz. bittersweet chocolate (chopped)
- chile paste
- 2 Tbsp. brown sugar
- sour cream
