- olive oil (for frying)
- 2 onions (peeled and finely chopped)
- 4 garlic cloves (peeled and finely chopped)
- 1 piece ginger (peeled and finely chopped, or 1 tsp ground ginger)
- 1 Tbsp. chilli powder (or a pinch if cooking for kids.)
- 2 tsp. cumin (ground or bashed seeds)
- 1 Tbsp. smoked paprika
- 400 grams chopped tomatoes (tins of)
- 300 grams puy lentils (or green, healthier if soaked overnight.)
- 200 grams bulgur wheat (pearl barley or rice, brown or red.)
- 1 Tbsp. cocoa powder
- 400 grams beans (tin of small, haricot, black or black-eyed, or 300g home-cooked.)
- 2 liters vegetable stock
- salt
- black pepper
- 1/2 lemon (or lime, optional)
- 1 tortillas (or wraps, flour or corn with sour cream or yoghurt)
- 2 corn tortilla chips (Spooned over, topped with a grating of good cheese and melted in the oven with some guacamole and salsa for dipping.)
- 2 slices bread (fresh, with a grating of cheese, avocado and shredded lettuce.)
- 4 inches taco shells (a couple of crispy, with all the trimmings.)
- 5 brown rice (Folded into a wrap with some, chopped tomatoes, sliced chillies and a little sour cream, burrito style.)
- 6 inches sandwich (a toasted cheese)
- 7 rice (With, yoghurt and chutney.)
- 8 potato (Over a buttered jacket)
