- 1/4 tsp. yellow mustard seeds
- 1/4 tsp. ground black pepper (freshly)
- 3 grams cilantro roots (thinly sliced)
- 1 tsp. kosher salt
- 14 grams lemongrass (thinly sliced, tender parts only, from about 2 large stalks)
- 14 grams galangal (1 piece, peeled fresh or frozen, not defrosted, thinly sliced against the grain)
- 1 tsp. zest (finely grated, from fresh or frozen kaffir lime, if you must, you can skip the zest and add 2 extra kaffir lime leaves later on)
- 1.25 oz. thai chiles (fresh green, or fresh green serrano chiles, thinly sliced)
- 1 oz. garlic cloves (peeled, halved lengthwise)
- 1.5 oz. shallots (peeled Asian, thinly sliced against the grain)
- 1 Tbsp. kapi (Kung, Homemade shrimp paste)
- 2 cups coconut cream (unsweetened, preferably boxed)
- 2 oz. palm sugar (coarsely chopped)
- 4 cups unsweetened coconut milk (preferably boxed)
- 36 fish balls (fresh or defrosted frozen)
- 6 eggplants (Thai apple, green and golf ball–size)
- 6 kaffir lime leaves (or so fresh or frozen)
- 2 thai basil (leafy, sprigs)
- 1 Tbsp. Thai fish sauce (plus 1 teaspoon)
- 18 thai chiles (fresh green, halved lengthwise)
