- 250 grams pork belly (rindless, in a 4-5cm thick strip)
- 1 pinch fine salt
- 100 mL oil (plain, e.g. sunflower, or vegetable)
- 1/2 cabbage (a hispi, core removed and sliced into roughly 8 large pieces)
- 100 grams oyster mushrooms (large ones roughly torn in half)
- 3 spring onions (cut into 3cm long lengths)
- 5 garlic (peeled cloves of)
- 5 inches ginger (piece of, cut into match sticks)
- 2 chillies (red bird's eye, lightly bruised)
- 200 mL chicken stock (or water, at a push)
- 1 pinch white sugar
- 1 Tbsp. oyster sauce (preferably a Thai brand)
- 2 Tbsp. fish sauce
- 1 pinch ground white pepper
