- 1 leek (white part only, roughly diced)

- 100 grams smoked cheddar
- 50 grams Gruyere cheese
- 4 anchovy fillets

- 200 grams macaroni pasta (cooked)

- 6 cauliflower (or so reserved, pieces)
- 20 grams Parmigiano Reggiano (grated)
- 10 grams breadcrumbs
- 2 thyme sprigs (leaves removed)

As a rule I never eat Mac & Cheese because I find it boring, bland and unsatisfying. Decided to give this recipe of Andy Allen's a go, and what do you know. I'm super glad there is leftovers and cant wait to dig in again tomorrow. Im pretty sure the anchovies, lemon, thyme and roasted cauli are the secrets to this taste sensation.
