- 1 cup panko breadcrumbs (soaked in milk 10 minutes then drained)
- 1 duck breast (double, attached at the skin, cleaned and plucked, then lightly butterflied)

- 1/3 cup extra virgin olive oil (plus 4 tablespoons)
- 1 red onion (thinly sliced)
- 1 head fennel (thinly sliced, chopped fronds set aside)
