- 1 cup cold water (very)
- 1/4 cup apple cider vinegar
- 2 1/2 cups flour (all-purpose)
- 2 Tbsp. granulated sugar
- 2 tsp. kosher salt
- 1 cup unsalted butter (2 sticks // 8 ounces very cold, cut into 1/2-inch cubes)
- 2 cups cherries (around 16 ounces fresh, stemmed and pitted)
- 1 cup fresh blueberries (around 6 ounces)
- 3/4 cup granulated sugar (divided into 1/2 cup and 1/4 cup portions)
- 4 Tbsp. cornstarch (divided into 3 tablespoons and 1 tablespoon portions)
- 1/4 tsp. kosher salt
- 1 large egg
- 1 tsp. water
- coarse sugar (2 tablespoons demerara, or other)
