- 1 lb. shrimp (16- to 20-count, tails on, peeled and deveined)
- 1/2 cup fresh flat leaf parsley (chopped, plus extra for garnish)
- 1/2 cup scallions (sliced, white and green parts, plus extra for garnish)
- 1/4 cup lemon juice (freshly squeezed, 2 lemons)
