- 1 onion (medium)
- 2 Tbsp. olive oil
- 1 bell pepper (yellow or red go well but any will do)
- 2 cloves garlic (1 tsp dried garlic)
- 2 cms ginger (1 tsp if using dried)
- 1 tsp. canela (dried, or 1 stick)
- 1 tsp. cayenne pepper
- 3 cups vegetable broth (hot)
- 2 sweet potatoes (large, approx 300 g. each a total of 2.5 cups chopped)
- 1/2 tomato purée
- 2 Tbsp. peanut butter
- 2 Tbsp. maple syrup
- 2 Tbsp. soy sauce (low sodium if necessary)
- 2 Tbsp. vinegar (any sort, lemon juice can also be used instead)
- salt (to taste)
- pepper (to taste)
- 1 tsp. pepper
- 1/2 freshly squeezed lime juice
- peanuts (to garnish, optional)
- 1/4 cup fresh cilantro (or coriander, Or other fresh herbs: go a bit wild with them – make it your signature dish by throwing in any and all of the following herbs that you have: basil, parsley, coriander, oregano)
