I wasn’t a fan of cooking scallops in olive oil. I quickly shifted and added butter to the pan, and it saved the scallops. I also used Asiago instead of Parmesan—a half cup was the perfect amount. The general flavor of the sauce was slightly bitter. I added some white cooking wine, and it smoothed out the flavor perfectly. I put it over white rice, but I think it would pair better with something like risotto.
I gave this recipe 3-stars because as it stands in the directions, it isn't anything special without the modifications.

Sooooo good! Quick, easy and delicious! Husband already asking when I’ll make it again. Definitely adding to the dinner rotation

Used vegetable broth instead of chicken. Going to try this with half heavy cream and half 2% to cut some cals. Serve over linguini or chickpea based spaghetti with salad or steamed veggie side.
