- 4 whole bone-in, skin-on chicken breasts
- 1/4 cup olive oil (good)
- kosher salt
- ground black pepper
- 5 cups homemade chicken stock (or homemade turkey stock)
- 2 chicken bouillon cubes
- 12 Tbsp. unsalted butter
- 8 oz. mushrooms (chopped, shiitake are nice about 1 & 1/2 cups)
- 2 cups yellow onions (chopped)
- 3/4 cup all purpose flour
- 1/2 cup heavy cream
- 2 cups carrots (1/4" slices, - blanched in boiling water for a couple minutes)
- 1 cup frozen peas
- 1/2 cup flat leaf parsley (chopped)
- pie crust (Perfect)
- 1 egg (beaten with 1 tablespoon of water, for egg wash)
