- 300 grams AP flour (King Arthur)
- 1 tsp. baking soda
- 1 tsp. fine sea salt
- 150 grams sugar
- 100 grams dark brown sugar
- 42 grams light brown sugar (the brown sugars should total 3/4 cup–I like more dark than light so the cookies are not too pale)
- 2 sticks unsalted butter (melted and slightly cooled)
- 40 grams egg yolks (Brown says 2–but for me it was 3–from large eggs in both cases, beaten)
- 1 1/2 tsp. vanilla
- 10 oz. chocolate chips (I like a little less than the full 12 oz bag for this recipe)
- sea salt (nice quality, for sprinkling)
