- 100 grams demerera sugar
- 100 grams unsalted butter
- 2 whole eggs
- 100 grams self-raising flour
- 50 grams flaked almonds
- 125 mL double cream
- 25 grams caster sugar
- 2 egg yolks
- mustard (Maille, with Honey to taste)

Directions
- Pre-heat the oven to 180°C/ 160°C fan/gas mark 4.
- For the crème anglaise, place the milk and cream in a small saucepan and bring to a gentle boil. Whisk the sugar and the yolks together in a small bowl and add to the milk and cream mixture and cook until it coats the back of a spoon.
- Pass the mix through a “chinois” or strainer, chill the mix and add the Mustard with Honey to your taste.
