I made these for a camping trip. I added 1/4 teaspoon of almond extract, 1/4 teaspoon of allspice, chopped walnuts & raw cacoa nibs. I used my KitchenAid mixer to mix the batter (instead of a food processor) then baked them for about 19-20 minutes. They turned out super light & fluffy. Everyone enjoyed them. Will definitely make these again.

I added Splend. pecans and orange zest and a little butter on the top when I took them out of the oven.

This is my favorite banana muffin recipe to date. It is really wonderful. I made a few changes. First, I added in 1/2 cup of Lakanto into the batter. I also added a half cup of chopped nuts and a half cup of chopped dates. Second, I made a nut crumble for the top, which consists of finely chopped walnuts or pecans, lakanto, cinnamon, and melted butter. Mix those all together, spread them on the top of each muffin, and press down lightly. Everyone I have shared these muffins with has loved them and asked for the recipe. Best of all, they are really quick and easy to make.
