- 3 chicken breast halves (skinless, boneless, and thinly sliced)
- 2 Tbsp. olive oil
- 1/4 cup Parmesan cheese (grated)
- 1/4 cup almonds (coarsely chopped)
- 2 Tbsp. almonds (ground)
- 2 Tbsp. whole wheat flour
- 2 Tbsp. whole wheat breadcrumbs
- 1/2 tsp. garlic powder
- ground black pepper
- salt
- cooking oil (spray)

Directions
- Cover the chicken with olive oil.
- Mix the rest of the ingredients together: Parmesan cheese, almonds, flour, breadcrumbs, garlic powder, and pepper and salt to taste. Cover the chicken with this mixture.
- Heat a skillet sprayed with cooking oil. Add the chicken and cook until golden brown on both sides and the chicken is cooked on the inside.
- Serve immediately.
