Almond Crunch Parfaits with Blueberry Yogurt

  • 2 tablespoons butter
  • 3 tablespoons brown sugar
  • 1 1/2 tablespoons honey
  • 1 1/4 cups old-fashioned rolled oats
  • 1/2 cup chopped almonds
  • 1 1/2 cups blueberries (plus extra for garnish)
  • 1 cup plain low fat yogurt
  • 1 teaspoon vanilla extract
  • 3 apricots (or peaches, pitted and chopped)
  • 1 teaspoon lemon juice

    Directions

    1. Preheat the oven to 350°F. Line a baking sheet with baking parchment. Melt the butter in a medium saucepan over medium heat. Stir in the brown sugar and 1 tbsp honey until blended. Stir in the oats and almonds and cook, stirring, for 2-3 mins.
    2. Spread the almond mixture on the baking sheet and bake for 7-10 mins until golden. Remove from the oven and cool.
    3. Place the blueberries, yogurt, vanilla and remaining honey in a blender and purée until smooth. Mix the apricots and lemon juice together. To serve, alternately layer the almond crunch, apricots and blueberry yogurt in four glasses. Serve garnished with extra blueberries.
