- 2/3 cup fresh lime juice (5-6 limes)
- 1 1/2 Tbsp. red curry paste (see note)
- 2 lb. boneless, skinless chicken breasts (or thighs, cut into bite-size pieces or strips)
- 1 English cucumber (thinly sliced)
- 1 red bell pepper (thinly sliced)
- 2 Tbsp. fresh lime juice
- 2 Tbsp. rice vinegar (can sub red wine or white wine vinegar)
