- 1/2 cup light brown sugar
- 1 1/2 tsp. ground cinnamon
- 1 tsp. baking powder
- 1/2 tsp. baking soda
- 1/4 tsp. salt
- 1/2 cup non dairy milk (I used soy milk)
- 1 egg substitute (1tsp. baking powder + 1 1/2 T. water + 1 1/2 T. oil)
- 3 Tbsp. canola oil
- 3/4 cup finely grated carrot
- 1/3 cup crushed pineapple in juice
- 1/2 cup confectioner’s sugar
- 1 Tbsp. dairy-free cream cheese (I use the vegan cream cheese from Trader Joe’s)
