- 5 oz. albacore tuna (1 can ,Genova Wild Caught, don't drain)
- 1/4 cup white beans (canned, drained and rinsed)
- 1/4 cup black olives (rough chopped)
- 1 golden beet (small, roasted and cut in wedges)
- olive tapenade (a spoonful of)
- 1/4 cup roasted red peppers
- 1 handful watercress
- fresh herbs (for garnish, optional)
- 1 1/2 cups red quinoa (cooked and cooled)

- 1/2 red pepper (hot ,or jalapeno thinly sliced)
- black sesame seeds (for garnish, optional)
- 1/4 cup extra-virgin olive oil
- 1/2 lemon (juice of)
- 2 Tbsp. fresh oregano (chopped)
- salt
- pepper (to taste)
