Description
Inspired by the French 75, the Air Mail is an effervescent, rum-based cocktail that combines rum, lime juice, and honey syrup topped with champagne and Angostura bitters. While the origin of the name is murky—it may have been named after the modern delivery method for mail—the Air Mail cocktail first appeared in print in the 1949 edition of Handbook for Hosts published by Esquire magazine.

- 1.5 oz. añejo rum
- 0.75 oz. fresh lime juice
- 1 oz. syrup (honey, 1 part honey to 1 part water)
- 1 oz. champagne (or other sparking wine)
- 1 dash Angostura bitters
