This was so good. I did an extra dredge of flour mixed with some Cajun seasoning, so we did flour, egg wash, then panko, and the texture was perfect. The dill/mayo dressing was the perfect combo with the spicy Cajun seasoning. We used this recipe for alligator tail also, and it turned out great!
