- 2 lb. garnet yams (sweet potatoes, peeled and cut into ½-inch cubes)
- 1 Tbsp. lime juice (freshly squeeezed, plus more if needed)
- 1 bunch fresh cilantro (chopped, for garnish, optional)
- 1/2 cup chopped peanuts (for garnish, optional)
- 6 carrots (unpeeled, cut into thirds)
- 2 yellow onions (unpeeled, quartered)
- 1 leek (white and green parts, cut into thirds)
- 1 bunch celery (including the heart, cut into thirds)
- 4 red potatoes (unpeeled, quartered)
- 2 sweet potatoes (unpeeled Japanese or regular, quartered)
- 1 garnet yam (unpeeled, sweet potato, quartered)
- 5 garlic (unpeeled cloves, halved)
- 1/2 bunch fresh flat leaf parsley
- 1 strip kombu
- 12 black peppercorns
- 4 whole allspice berries
- 2 bay leaves
- 8 qt. filtered water (cold, plus more if needed)
