- 2 medium sweet potatoes (peeled, cubed, about 1 pound)
- 14 oz. fire roasted diced tomatoes
- 7 cups low sodium chicken broth
- 1 tsp. chicken bouillon (granulated, or 1 cube, crushed)
- 15 oz. kidney beans (rinsed, drained)
- 1 bay leaf
- 1 cup crunchy peanut butter (or smooth)
- 2 cups cauliflower (chopped into bite size pieces)
- 1 bunch collard greens (stem removed, cut into ½-inch strips, see prep in notes)
- 4 tsp. harissa (may sub ½ tsp + cayenne pepper)
