- 1/2 medium onion
- 2 tomatoes (juicy)
- 5 garlic cloves
- 1 inch ginger
- 1 Tbsp. sambal oelek (or asian chili sauce or other hot chile sauce to taste)
- 1 Tbsp. tomato paste (or ketchup)
- 1 1/2 tsp. ground cumin
- 2 tsp. ground coriander
- 1 1/2 tsp. harissa spice blend
- 1/4 tsp. black pepper
- 1/4 cup nut butter (like peanut butter or almond butter)
- 2 Tbsp. peanuts
- 1/2 cup red lentils
- 2 cups veggies (chopped small or thin slices - zucchini, sweet potato or potato, carrots, eggplant, broccoflower etc)
- 2 1/2 cups vegetable stock (or water)
- 3/4 tsp. salt (to 1)
- 1 tsp. lime juice (or more)
- 1/2 cup baby spinach (packed, or other baby greens.)

omg it was so delish! I followed the recipe but then took some of the water out as I felt it would be better thicker as a stew rather than a soup! I used sweet potato, aubergine and green beans as the veg Mmmm

This is a dish that hubby, Keith, requests I make again. I subbed almond butter for the peanut butter and cashews for the peanuts. I added more lime juice to mine along with some spice. AND, I made my own harissa sauce - super easy and yummy. All in, an entire head of garlic (including the soup) along with some soaked New chile peppers (2), olive oil, cilantro, ground cloves, cumin, and coriander.
