- 1/4 cup coconut flour
- 1/4 cup arrowroot (or sub an additional 1/4 cup almond flour)
- 1/2 tsp. fine sea salt
- 4 eggs (large free run)
- 1/4 cup unsalted butter (melted)
- 2 Tbsp. Truvia (or sweetener of choice)
- 1/2 cup shredded zucchini (finely, packed - I used yellow)
- 1/4 cup greek yogurt (plain unsweetened high protein)
- 1/2 fresh lemon (juice from)
- 2 drops lemon oil (natural, optional)
- 1 tsp. vanilla extract
