Excellent and quicker than potato skins. Great for a party. Be generous with the cheese.

Awesome!!!! I used russet potatoes instead of Yukon, and they worked perfectly. I also microwaved them (after cutting into them) in about 1/2" of water for 8 minutes, and then added bacon, sea salt, pepper, butter. I cooked them in an air fryer at 400 degrees F for about 20 minutes, basted them twice, and I covered them with foil (and added the parm) at about the halfway point. I would absolutely make them again!

It was good but it is a skill to be able to cut them perfect like the photo! I have tried both red and white potatoes, I definitely like this recipe with the red ones much better and I've added cheese and bacon bits with sour cream at the end of cooking! The kids love them too
