- 4 blocks ice (plain water pucks)
- 16 oz. frozen pure unsweetened acai pulp (400 g, thawed)
- 1/2 cup water (125 mL)
- 3/4 cup agave nectar (180 mL, or honey)
- 1 lemon (juiced, 30 mL)
- 1 pinch kosher salt (0.9 g)
- dragon fruit (for garnish, optional)
- mango (sliced, for garnish, optional)
- pomegranate seeds (for garnish, optional)

Directions
- Fill your molds to the fill line with plain water. Freeze for 12 to 24 hours.
- This can be made the day before. Thaw your acai pulp. In a blender, puree 16 oz. (400 g) acai, 3/4 cup (180 mL) agave nectar, lemon, 1/2 cup (125 mL) water, and salt until well combined. Strain and put in the refrigerator to get very cold.
- This recipe does require tempering. Shave ice into a bowl of your choice. Pour acai syrup over ice to coat. Top with chopped dragon fruit, mango slices, pomegranate seeds or any fruit of your choice.
- Tip: Do not use acai powder in place of pulp for most powders are not water soluble.
