- 3 handfuls salad leaves (I used rocket, spinach and watercress)
- 12 sugar snaps (sliced on the diagonal)
- 15 grapes (halved)
- 4 spring onions (thinly sliced)
- 3/4 cucumber (diced)
- 1 courgette (small, zucchini thinly sliced or spiralized)
- 5 stalks broccoli (tender stem, lightly steamed or raw)
- 1 stick celery (thinly sliced)
- 4 peas (tblsps raw)
- 4 pistachios (tblsps)
- 4 pumpkin seeds (tblsps)
- 15 green olives (or more)
- 1 avocado (small ripe, peeled and sliced)
- 1 Tbsp. mint (or more chopped)
- 3/4 cup plain yogurt (I used organic soy yogurt - not SCD)
- 1 clove garlic (crushed)
- 1 Tbsp. fresh lime juice
- 1 pinch salt
- ground black pepper (freshly)
