- 8 oz. beef tenderloin (flank steak or top sirloin, thinly sliced, I sliced it while frozen)
- 1/2 tsp. cornstarch (cornflour)
- 1 tsp. soy sauce (divided)
- 1/4 tsp. white pepper
- 1 tsp. cooking oil (high heat, divided)
- 4 oz. glass noodles (dried)
- 2 eggs
- 1/2 tsp. salt
- 1 pinch white pepper
- 2 garlic cloves (minced)
- 1/2 small onion (thinly sliced)
- 1 green chili (or fresh, hot, red, preferably Thai, deseeded for less heat, finely sliced)
- 1/2 cup bean sprouts (ends trimmed)
- 1/2 cup red pepper (thinly sliced)
- 4 tsp. fish sauce (nam pla)
- 1 Tbsp. oyster sauce
- 2 tsp. brown sugar (or palm)
- 1/2 cup water
- coriander leaves (fresh, cilantro for garnish, I have to admit I do not like cilantro, so I used parsley, optional)
