- 2 1/2 cups dark brown sugar (soft)
- 6 eggs (lightly beaten)
- 3 1/3 cups plain flour (low protein if you have it, sifted)
- 5 tsp. baking powder
- 1 tsp. salt
- 200 mL buttermilk
- 70 mL full-fat milk
- 50 grams unsalted butter (softened)
- 40 grams cocoa (sifted)
- 350 grams icing sugar (sifted)
- 1/2 tsp. vanilla extract
- 1 pinch sea salt
- 30 mL whole milk
- 110 mL double cream (or if you are after a slight tang use sour cream)
