  • 1 cup vegetable broth (plus up to another 1/2 cup as needed)
  • 5 kale leaves (lacinato/Tuscan, de-stemmed and chopped, could just as easily have been thawed frozen organic spinach or peas)

    Quick and easy worked out fine

    It came out pretty good. The Hubster didn’t like it but the kids and I did. It was a little too spicy. If I make it again I’ll omit the red pepper flakes and add more coconut milk.
