- crust
- 1 cup pitted dates (soaked in warm water for 10 minutes then drained)
- 1 cup walnuts (or almonds)
- 1 1/2 cups raw cashews (soaked in water 4-6 hours then drained, NOTE: If short on time, pour boiling hot water over the cashews, soak for 1 hour, then drain and blend as instructed!)
- 1 lemon (large, juiced, scant 1/4 cup)
- 1/3 cup coconut oil (melted)
- 1/2 cup full fat coconut milk (see instructions for note)
- 1/2 cup agave nectar (or maple syrup, or honey if not vegan)
- 2 Tbsp. natural peanut butter (salted)
- 1/4 cup blueberries fresh (wild, or frozen)
- 3 Tbsp. caramel sauce (bourbon)

They came out delicious! Only problem as the past reviewer said they became gooey when not frozen. I just kept them in the freezer and enjoyed one frozen treat per night. I also took them to a party and served them cold. I received many compliments from the guests that tried them. Even non vegans 👍
