Added cumin, chipotle chili powder, and cilantro. It was great and super easy to make!

Absolutely delicious! I made a few modifications, including adding fresh pico de gallo, sweet onions, cilantro, sweet red peppers, and granulated garlic. I substituted kidney beans for black beans. I also doubled the amount of quinoa as others had suggested and that was definitely the right choice. Will definitely make again!

I could see adding more seasoning (perhaps some coriander along with the chili powder? Agree cilantro would be excellent. I added sliced grape tomatoes and sliced black olives. Used thawed frozen corn. Could add roaster chicken and a dollop of sour cream, too. If I were serving to guests, I might mix quinoa with salsa and seasoning, then place in individual bowls with other ingredients arranged nicely for people to mix their own. I mixed mine all together...not as pretty as in the picture, LOL! Yummy healthy eating with lots of room for personal tweaks!

Delicious. Only thing I added was cilantro. Definately gonna be making this one again.

Loved it! Added more chili powder salsa and pepper. I think 1 3/4 cup is a serving but might need to look back are recipe. Maybe next time stir the chili powder into the salsa and then quinoa and then add the rest to make sure it combines.

Easy to throw together and really goo. i threw some grilled chicken on to make it a meal!

Pretty delicious! I didn’t have any avocados that were ready but I did have some guacamole that I used instead. Great dish!

nice easy alternative, good for leftovers. Could adjust flavour combos. do this again.

Very easy and quick to make! I made it for meal prep and couldn’t stop eating it while I was putting it into containers. Definitely making this recipe again :)

I changed a few things, I added Mexican cheese, grilled chicken and used a quinoa brown rice blend. I also topped it with a few frito chips and splashed some fresh lime..it was delicious!!

I use this mixtures and place it in a tortilla for lunch. I smear the tortilla with avocado, sprinkle some Everything but the bagel seasoning, fill tortilla with the quinoa, beans, and corn.

Delicious. I also added, green peppers, red peppers, yellow onion, tomatoes, and paprika.

Very tasty. We loved it definitely better the first night not so much a couple of nights later. I used fresh corn and didn’t cook it.
