- 2 Tbsp. seasoning rub (I use my smoked paprika rub, but you can use a seasoning salt or bbq rub - basically any rub with salt, garlic powder, onion powder, paprika - not an herb rub)
- 1/2 lb. bacon (cut strips in half)
- 4 oz. shredded cheddar cheese
- barbecue sauce (sugar free, optional)

I used Chicken thighs sprinkled with a Cajun rub and pre-cooked the bacon. Then lay it over the chicken.
Crumbled it up in the three- cheese topping. Turned out very tasty.

It was good but next time I’ll use chicken tenders and crisp bacon bites for I stead of using strips
