they turned out fantastic! Tasted so yummy, and if you add some chocolate chips they become chocolate chip cookies. The chips will cover the taste of peanut butter. The cookies are so soft and fluffy too

My mom has a number of food allergies, so we made these for her to give her a little something sweet to savor during the holidays. She can’t have peanuts, so we subbed almond butter and used coconut flour instead of almond flour to avoid an overly nutty taste. We also added 1 tbsp Dutch-processed 100% cocoa and 1 tbsp brown sugar. Really good, but not quite as sweet as we might have liked. We’ll make some adjustments and definitely make again.

Double the ingredients because you'll want more.
I ended up with 16 small cookies.
I replaced the almond flour with brown rice flour and used a bit less baking soda and they are sooo good. Def would put in chocolate chips next time.

Great little cookie. Easy, too. I added mini chocolate chips and sprinkled w/sea salt. To borrow a phrase from a certain Nevada city, these are just the right amount of wrong for a cookie
