This receipe was delicious! I did not use 3 cups of rice for the two of us...I used two but I also included one pound of hamburger and it became more than a side dish. I am not a lunch eater but sometimes need a snack and this is perfect for that. Definitely on my " keeper" list. Easy and delicious.

Five ingredients makes this easy but it needs more. I cut the recipe in half because it was only for two of us. I added 1/4 teaspoon of cumin, 1/8 teaspoon of salt and a couple shakes of garlic powder. Next time I will add chopped onions, bell pepper (or maybe jalapeños)and 2 cloves of fresh garlic when I sauté the corn and black beans. Sooo 5 ingredient Mexican rice becomes 10 ingredient Mexican Rice but with much more flavor!

Turned out excellent although I expanded the ingredients to include sauteed yellow bell peppers, onions, jalapeños, mushrooms and shrimp

It was yummy, but for my taste I had to add some sour cream, but I recommend it

Pretty great! Easy to keep simple as-is or dress it up. I added a package of meatless crumbles for a hearty vegan main course.

Great, very simple. I have done it a few times, infallible. Avocado is a must. I cooked the rice first.

It was good and flavorful. I would have preferred to cook the rice first but if used for tacos, it would be a hit. This was a main course meal for my house, and they enjoyed it. No leftovers

Tasted great, super easy meal. We ate it wrapped in a tortilla with avocado and sour cream. Really would have been good with adding some southwest chicken to complete the meal.

Easy and delicious. used southwest salsa, red beans not black, left out avocado (i HATE it) and served with pork loin, it was great.

this stuff SMACKS! It's very easy to put together and it goes along well with tacos or by itself. add some lime juice on it and you're on the road to flavor town.

Thank you for sharing your recipe. I made it and it was delicious. I also added lime juice with the avocado and cilantro. I could use this in many of my dishes going forward. I can see myself adding some shredded cheese too, yum!

I made brown rice in the rice cooker with chicken broth then followed the recipe. It was great! It will be as flavorful as the salsa - I added a fresh mild. It was a great recipe and I’ll use it again!

This was good, quick, easy and versatile to adapt in many different ways! Today I used up some leftover Spanish rice and refried beans rather than cook the brown rice. I still added black beans and 1 fresh cob of corn. The salsa I have was heavy on garlic, lime, and chili powder, so I skipped adding spice and cilantro. It was delicious with our sweet potato chips, and also mixed with homemade pineapple mango salsa. I am saving this recipe as a baseline to use often. Thank you!

Amazingly easy! I love that I can be versatile with this by changing to white rice or using a different bean. It doesn’t give a measurement of chili powder, but you can add to your taste I added onions and peppers to mine and also used pinto beans instead of black.I had no black beans.

Very good. I added fajita spice flavored tempeh. I also didn't have any salsa or rotel so I added 1 whole can of Amy's spicy chili. It was yummy.
