- 2 lb. sweet potatoes (organic, washed, yucky parts removed/trimmed, cut in wedges or fries)
- 1/2 tsp. paprika powder
- 1/4 tsp. turmeric powder
- 1 tsp. Herbes de Provence (mix, or dry oregano, thyme and rosemary)
- 1/8 tsp. black pepper (to taste)
- 2 Tbsp. extra-virgin olive oil
- 1/4 tsp. sea salt (grey, to sprinkle on after the fries are cooked)
- 1 clove garlic (minced very finely)
- 3 Tbsp. fresh cilantro (chopped)
- 1/3 cup mayonnaise (organic, your choice)
- fresh lemon juice (a squeeze)
- black pepper (to taste)
- 398 mL black beans (organic, 1 regular size can rinsed and drained)
- 1/4 cup chickpea flour
- 1/4 cup tapioca starch
- 1 red onion (minced)
- 3 Tbsp. fresh cilantro (minced)
- 1/2 tsp. paprika powder
- 1/2 tsp. sea salt
- black pepper (a few pinches)
