- 1 tsp. kosher salt (or to taste)
- 1 lb. ground turkey
- 2 cups sweet potato (cut into ½ inch pieces)
- 15 oz. canned black beans (drained and rinsed)
- 15 oz. chunky salsa (I used mild. If you prefer more heat, use medium or hot.)
- 2 cups baby spinach (loosely packed)
- 1/2 cup cheddar cheese (optional and to taste)
