- 1 tsp. ginger (freshly grated, or ½ teaspoon ground ginger)

- 16 oz. shrimp (thawed, peeled, and deveined)
- 1/4 cup cornstarch
- 1/2 tsp. salt
- 1/4 tsp. freshly ground black pepper
- 1 bell pepper (medium, seeded and chopped, I used ½ red and ½ yellow for color)
- 1 cup snap peas (chopped)
- 2 green onions (both white and green parts, divided)
- 1 clove garlic (minced)
- 1/2 tsp. red pepper flakes
