- 2 1/2 cups low sodium chicken broth
- 16 oz. tomato sauce
- 15 oz. black beans (rinsed and drained)
- 1 tsp. salt
- 1 tsp. chili powder
- 1/2 tsp. dried oregano
- 1 tsp. ground cumin
- 2 cups frozen corn kernels
- 2 Tbsp. fresh lime juice (from about 1 medium lime)
- 1/2 cup chopped cilantro
- 2 cups diced chicken (cooked, or turkey)
- 1 cup Monterey Jack cheese (shredded, or a combination)
