- 1/3 cup dry quinoa (rinsed and drained)

- 3 cups shredded rotisserie chicken (or boil chicken in salty water and shred)
- 2 large zucchini (cut to bite size)

- fresh cilantro (for garnish, optional)

I followed this exact recipe (which I rarely do), but really didn’t like this soup at all. As I was making it n the first day while on the stove, it tasted really good and my family loved it as well, but the next day n every day thereafter, I hated it. Just too strong of a cumin-like taste and didn’t go right. Def won’t make with these seasonings again.

Great base recipe. Added extra quinoa as per other reviewer, and it was very stew-like. Will add more heat next time.

This was good, very easy to make, very flavorful and he acts like healthy. Next time I might slightly increase the quantity of the quinoa as it was barely discernible and got overwhelmed by the other ingredients.

Decent base. I wanted more of a stew so I added more quinoa. I added more lime, Worcestershire, red pepper and kale instead of zucchini as well. I also used fresh tomatoes so had to cook those down a bit longer. It's also pretty good with tortilla chips.
