- 8 oz. top sirloin (can use chicken breast as well)
- 4 cups chicken broth (low or no sodium)
- 2 large eggs (you really want fresh eggs here)
- 2 cubes curry (Japanese, Golden Curry seems to be a pretty popular brand)
- ramen noodles
- spaghettini
- oil (a bit of)
- green onion (to garnish, optional)

I left out the eggs. But everything else was great. Added some red pepper flakes to give it a kicks next time I will add white corn but this was great

Turned out very nicely! I would recommend the following in your preparation: do season the meat to your liking as you fry it; you can use 2.5 or 3 cubes of curry if you like your broth a bit thicker; lastly, cooking all 5 bundles of udon noodles in a package will yield quite a bit, but it's helpful if you plan on a second preparation of the dish.
Excellent tip on the eggs. 6.5 minutes to cold water is perfect.
If you can't find top sirloin (meat was in shorter supply during COVID-19 lockdown!), bottom sirloin is OK too.
