ive hesitated reviewojg this because i made several small and one major change bit we loved this so much i thought others may like to hear about our take. First off i didnt have shallots so i used onions. We used kale but i also used italian basil with a drop of cilantro oil because its what i had. the largest change i made, however, was the curry paste. i couldnt find my red curry paste so i used green curry powder. i know that orobably drastically changed the flavor but this was a hige hit with my family and in my opinion green curry is alot more mild. i probably put in about a tbsp. it was delicious and so simple. We served it with rice noodles. it will definitely be made again

So so SO good! It was fun working with some new ingredients. My family was impressed, and since I had a ton of Thai basil left, I made 2 other dishes from the website that this recipe came from! All of them were fantastic.

A little heavy but lots of flavour. Definitely making it again but will probably dilute the coconut milk with some stock.

Delicious. I used chichen breast because I didn’t have any chicken thighs, but I’m going to remake it soon.. the right way
