- 1 cup kidney beans (dry, or 2 15 ounce cans)
- 1/2 cup pinto beans (dry, or 1 15 ounce can)
- 1/2 cup garbanzo beans (dry, or 1 15 ounce can)
- 1 bay leaf
- 1/2 onion (roughly chopped)
- 1 carrot (roughly chopped)
- 2 cloves garlic (whole, bruised)
- 2 tsp. fine sea salt
- 6 cups water (or vegetable stock, I actually used an equal mix of vegetable stock and water)
- 1 cup quinoa
- 2 whole chilies (in adobo sauce, reserve the sauce)
- 4 ancho (dried, or pasilla chilies, stems and seeds removed, I used pasilla)
- 3 chilies (dried New Mexico, or Costeno, Choricero, stems and seeds removed)
- 4 cups vegetable broth
- 28 oz. tomatoes (1 can, whole, packed in juice)
- beans (Soaked and)
- cooking liquid (reserved bean)
- 2 Tbsp. olive oil
- 1 onion (diced)
- 5 cloves garlic (minced)
- 1 1/2 Tbsp. cumin
- 1 Tbsp. unsweetened cocoa
- 1 Tbsp. dried oregano
- 1 Tbsp. soy sauce
- 1 Tbsp. marmite
- 16 oz. sweet corn (1 package, frozen petite)
- 2 Tbsp. bourbon
- fine sea salt (to taste)
- 12 oz. porter (or stout this is optional)
