- 2 tsp. olive oil (good quality)

Delicious and easy. Even better the second day. I doubled the dressing though because it didn't seem like it would be enough.

Turned out great! I added some pepper and garlic seasoning, sliced green onion and fresh grilled corn off the cob, along with a small amount of finely diced fresh mint and kale from the garden , deleted the sun dried tomato. So refreshing!

Delicious! I added some marinated artichoke hearts and topped with feta! I will definitely make it again!

Simple to prepare and great flavor. I used some barley that I cooked with the quinoa as well for extra texture. I added finely chopped jalapeño to the oil-vinegar mix and let it sit to add a touch of heat as well

Very fresh and yummy however definitely needed more red wine vinegar... i would double way it says in the recipe

Great taste. It was hit at the pot luck with kids and adults alike. I will make it again but I will leave more time to make it. It takes more than 20 minutes because of the cutting of veggies.

Very tasty and fresh. A little bland, I would definitely add a little more seasoning next time.
